Not long ago, a customer planning an oyster mushroom farm asked us a simple question.
He intended to use a substrate made mainly from sawdust and wheat bran and wanted to know whether it would also work well for oyster mushrooms.
It was a reasonable question. Many cultivation guides online introduce sawdust-based substrates, so it’s easy to assume that if a formula works well for one mushroom, it should work for others too.
Our answer was straightforward.
Sawdust and bran are widely used in mushroom cultivation, but in our experience, they are more commonly used for species such as shiitake.
For oyster mushrooms, king oyster mushrooms, and several other species, commercial growers often choose agricultural materials such as corn cobs, straw, or cottonseed hulls as the main substrate ingredients.
The customer immediately asked another question.
“Why?”
That conversation inspired this article.
Because after years of talking with growers and investors from different countries, we have noticed that many people begin by looking for a substrate formula.
Experienced commercial growers usually begin somewhere else.
They start by understanding the mushroom.
When discussing mushroom substrates, many articles focus on recipes.
We believe the experience behind those recipes is far more valuable.
China has cultivated edible mushrooms for centuries and has spent decades developing commercial mushroom production on a large scale. Today, thousands of commercial mushroom farms across the country produce a wide variety of species, including shiitake, oyster mushrooms, king oyster mushrooms, enoki, lion’s mane, and many others.
This long history of commercial cultivation has generated something that cannot be replaced by theory alone—practical production experience.
Every production cycle provides feedback.
Every adjustment to a substrate formula affects yield, contamination rate, production cost, raw material consumption, and operational efficiency.
Over many years, commercial growers have continuously refined their cultivation practices. Some substrate formulations have been improved, others have gradually disappeared, while those that consistently perform well have become widely adopted within the industry.
This does not mean China has a universal substrate formula that every grower should copy.

Although substrate formulations vary depending on local raw materials and production preferences, several cultivation approaches have been refined through years of commercial practice.
For example:
Shiitake mushrooms are commonly cultivated on hardwood sawdust-based substrates supplemented with bran and other nutritional ingredients.
Oyster mushrooms are more frequently produced using agricultural by-products such as corn cobs, straw, or cottonseed hulls.
King oyster mushrooms often use mixed substrate formulations that balance biological performance, production consistency, and raw material availability.
These choices were not established because they looked good on paper.
They became common because commercial production repeatedly proved that they worked.
A substrate may support mushroom growth.
That does not automatically make it the best choice for commercial production.

Can the substrate be processed efficiently through crushing, mixing, bag filling, sterilization, and incubation?
For commercial farms, substrate selection is not simply a cultivation decision.

People sometimes ask another question.
“If sawdust can grow oyster mushrooms, why don’t commercial farms simply use sawdust for everything?”
The answer is surprisingly practical.
Commercial farms are not trying to find a substrate that can grow mushrooms.
They are trying to find one that grows mushrooms efficiently, consistently, and economically.
In many parts of China, agricultural by-products such as corn cobs, straw, and cottonseed hulls are abundant and have been used in commercial cultivation for many years.
Over time, growers accumulated enough production experience to understand where these materials performed well, how they behaved during processing, and how they affected production costs.
This is why substrate selection in commercial farming is rarely based on habit.
It is based on years of commercial experience.
One thing we have learned from commercial mushroom production is that growers often ask for the wrong thing.
They ask:
“Can you send me your substrate formula?”
But experienced growers usually ask different questions.
What mushroom species are we cultivating?
Which agricultural materials are readily available locally?
Which materials provide the best balance between biological performance and production cost?
Which substrate works efficiently with our production equipment?
These are the questions that shape successful commercial production.
Perhaps the biggest lesson from China’s commercial mushroom industry is not a particular formula.
It is a way of making decisions.
Instead of copying recipes, experienced growers build substrate strategies around mushroom biology, local resources, and commercial production experience.
Although China’s commercial cultivation experience provides valuable reference, we never recommend copying a substrate formula without considering local conditions.
A successful formulation in China may not be the most economical solution in Brazil.
The best substrate in Europe may differ from the most practical choice in Southeast Asia.
Raw material availability, transportation costs, climate, labor, and production targets all influence substrate design.
The real value of commercial experience is not providing one answer for every farm.
It is helping growers understand how to make better decisions under their own conditions.
Another lesson from commercial production is that substrate selection should never be separated from equipment planning.
Different raw materials behave differently during crushing, mixing, moisture adjustment, bag filling, sterilization, and incubation.
A substrate that performs well biologically may still create unnecessary production challenges if it cannot be processed consistently at commercial scale.
For this reason, experienced mushroom farms usually evaluate substrate formulation and equipment configuration together from the very beginning of a project.
This approach improves production consistency while reducing long-term operating costs.
Looking back at the customer’s original question, the answer was never simply whether sawdust and bran could grow oyster mushrooms.
The more important question was whether that substrate represented the best choice for his production goals.
Decades of commercial mushroom cultivation in China have shown that successful farms rarely rely on a single substrate formula for every mushroom species.
Instead, they continuously match substrate materials with mushroom biology, locally available agricultural resources, production efficiency, and long-term operating costs.
Those conclusions were not formed overnight.
They were developed through years of commercial production, refined across thousands of mushroom farms, and verified through countless cultivation cycles.
For growers planning a new mushroom project, that may be the most valuable experience worth learning from.
